I don't often talk about cooking on my blog because...
I don't like to do it!
OK,
the truth is out.

I only cook because I have to.
I mean we have to eat.
And yes,
I cook for my family almost every day.
We rarely eat out,
but that doesn't mean I like it.
In my perfect world at each meal time we would all sit around a table and talk after I hooked everyone up to and IV that feed them all their nutrients.
No mess or dishes to clean up!!!
Everybody wins!
OK, back to reality.
I do however enjoy baking a little bit more.
That's probably due to my sweet tooth.
When I got the opportunity to write about COOL WHIP Whipped Topping I jumped at the chance.
In fact even my youngest can make great treats with COOL WHIP.
We make a treat for Family Night every Monday evening.
Everyone takes a turn to make a treat.
(OK, Mom helps everyone make a treat each week.)
Branden made different falvors of jello,
which is yummy,
but it is better layered between layers of COOL WHIP.
Easy peasy!
Another favorite for Family Home Evening treat is
Chocolate Eclair Cake.
It's soooo good and easy I decided to actually share a recipe with ya!!
You need:
Graham Crackers
8 oz container of COOL WHIP
2 small packages of Instant French Vanilla Pudding
3 cups of cold milk
Line the bottom of a 9 x 13 pan with graham crackers.
(Whole not crushed)
Beat together pudding and milk 2-3 minutes.
Fold in COOL WHIP.
(Which makes the filling soooo creamy tasting.)
Pour filling over crackers and top with another layer of crackers.
For the frosting you will need:
1 1/2 cups powdered sugar
1/2 cup butter
3 tablespoons of Hot milk
3-5 tablespoons of cocoa
Beat frosting ingredients together
and pour over top layer of graham crackers.
Refrigerate over night.
(Or at least and hour or two if you forgot to make it the night before!)
Yum!!!
Top with a dollop of COOL WHIP which makes it special!
Oh, and I forgot to take a picture of the last step!
(That's because once I put the COOL WHIP on my family had already started eating their pieces!)

I also love to use COOL WHIP to make quick salads.
(Because I usually need a last minute side dish!)
You know the kind where you add jello mix, fruit, cottage cheese, or whatever you have to COOL WHIP and you have a yummy salad?
